Description

Crisp and flavorful cranberry biscotti with a sweet orange glaze. Perfect for dipping in coffee or tea.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup dried cranberries
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • For the glaze: 1 cup powdered sugar, 2 tbsp orange juice

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. Add eggs, vanilla, and orange zest. Stir until combined.
  4. Fold in cranberries.
  5. Shape dough into a log on the baking sheet.
  6. Bake for 25 minutes until firm.
  7. Cool for 10 minutes, then slice diagonally.
  8. Return slices to the baking sheet and bake for another 10 minutes.
  9. Mix powdered sugar and orange juice to make the glaze.
  10. Drizzle glaze over cooled biscotti.

Notes

  • Store in an airtight container for up to a week.
  • For extra crunch, bake biscotti slices for 5 more minutes.
  • Replace orange juice with milk if preferred.
