Ingredients

- 2 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup dried cranberries
- 1 tbsp orange zest
- 1 tsp vanilla extract
- For the glaze: 1 cup powdered sugar, 2 tbsp orange juice
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix flour, sugar, baking powder, and salt.
- Add eggs, vanilla, and orange zest. Stir until combined.
- Fold in cranberries.
- Shape dough into a log on the baking sheet.
- Bake for 25 minutes until firm.
- Cool for 10 minutes, then slice diagonally.
- Return slices to the baking sheet and bake for another 10 minutes.
- Mix powdered sugar and orange juice to make the glaze.
- Drizzle glaze over cooled biscotti.
Notes
- Store in an airtight container for up to a week.
- For extra crunch, bake biscotti slices for 5 more minutes.
- Replace orange juice with milk if preferred.
