- 1 cup dried cranberries
- 1 cup pitted dates
- 1 1/2 cups rolled oats
- 1/2 cup almond flour
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper.
- In a food processor, blend cranberries and dates until finely chopped.
- In a bowl, mix oats, almond flour, honey, coconut oil, vanilla, and salt.
- Press half the oat mixture into the pan.
- Spread the cranberry-date mixture evenly over the base.
- Top with the remaining oat mixture, pressing lightly.
- Bake for 20-25 minutes until golden.
- Cool completely before cutting into bars.
Notes
- Store in an airtight container for up to a week.
- For a nut-free version, replace almond flour with oat flour.
- Adjust honey to taste if preferred sweeter.
