Description

A moist and flavorful loaf combining the warmth of gingerbread with the tartness of cranberries.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1/2 cup hot water
  • 1 cup fresh cranberries

Instructions

  1. Preheat oven to 350°F. Grease a loaf pan.
  2. Whisk flour, baking soda, ginger, cinnamon, cloves, and salt in a bowl.
  3. Cream butter and sugar until fluffy. Add molasses and egg.
  4. Mix dry ingredients into wet ingredients alternately with hot water.
  5. Fold in cranberries. Pour batter into the pan.
  6. Bake for 50-55 minutes. Cool before slicing.
