Ingredients

- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites, room temperature
- 1/4 cup granulated sugar
- 1/4 tsp cream of tartar
- 1/2 cup cranberry jam
- 1/4 cup unsalted butter, softened
- Red food coloring (optional)
Instructions
- Sift almond flour and powdered sugar together in a bowl.
- Beat egg whites with cream of tartar until foamy. Gradually add granulated sugar and beat until stiff peaks form.
- Gently fold dry ingredients into egg whites. Add food coloring if desired.
- Pipe small circles onto a baking sheet lined with parchment paper. Let rest 30 minutes to form a skin.
- Bake at 300°F (150°C) for 15-18 minutes. Cool completely.
- Mix softened butter with cranberry jam to make filling.
- Sandwich two macaron shells with filling. Refrigerate for 24 hours before serving.

- Use aged egg whites (left uncovered in fridge for 1-2 days) for better texture.
