Ingredients

- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 large egg
- 1 cup milk
- 1/4 cup vegetable oil
- 1 cup fresh cranberries
- 1/2 cup brown sugar
- 1/4 cup cold butter
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 375°F and line a muffin tin with paper liners.
- Mix flour, sugar, baking powder, and salt in a bowl.
- Whisk egg, milk, and oil in another bowl, then combine with dry ingredients.
- Fold in cranberries.
- Prepare streusel by mixing brown sugar, flour, cinnamon, and cold butter until crumbly.
- Fill muffin cups halfway with batter, sprinkle streusel on top.
- Bake for 20-25 minutes until golden.
- Cool before serving.

- Use fresh or frozen cranberries.
- Do not overmix the batter.
