Description

A quick and easy recipe for avocado quesadillas. Perfect for a light meal or snack.


Ingredients

  • 1 large avocado, mashed
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 2 large flour tortillas
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon lime juice
  • 1 tablespoon chopped cilantro

Instructions

  1. Heat a large skillet over medium heat.
  2. In a bowl, mix mashed avocado, lime juice, salt, and pepper.
  3. Spread the avocado mixture evenly on one tortilla.
  4. Sprinkle cheese, tomatoes, red onion, and cilantro over the avocado.
  5. Place the second tortilla on top.
  6. Cook in the skillet for 2-3 minutes per side, until golden and crispy.
  7. Cut into wedges and serve warm.
