- 1 large avocado, mashed
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
- 2 large flour tortillas
- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon lime juice
- 1 tablespoon chopped cilantro
Instructions
- Heat a large skillet over medium heat.
- In a bowl, mix mashed avocado, lime juice, salt, and pepper.
- Spread the avocado mixture evenly on one tortilla.
- Sprinkle cheese, tomatoes, red onion, and cilantro over the avocado.
- Place the second tortilla on top.
- Cook in the skillet for 2-3 minutes per side, until golden and crispy.
- Cut into wedges and serve warm.
