- 2 green onions, chopped
Instructions
- Peel and cube the baked potatoes.
- Melt butter in a large pot over medium heat.
- Stir in flour to make a roux, cooking for 1 minute.
- Gradually whisk in milk and cook until thickened.
- Add potatoes, cheese, and sour cream, stirring until cheese melts.
- Season with salt and pepper.
- Simmer for 10 minutes.
- Garnish with bacon and green onions before serving.

- For a smoother texture, blend part of the soup before adding toppings.
