A classic creamy macaroni salad perfect for picnics, potlucks, or as a side dish.
Ingredients

- 2 cups elbow macaroni
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup diced red bell pepper
- 1/4 cup shredded carrot
- 1/4 cup chopped fresh parsley
Instructions
- Cook the macaroni according to package instructions. Drain and rinse under cold water.
- In a large bowl, mix mayonnaise, sour cream, mustard, vinegar, salt, and pepper.
- Add the cooked macaroni, celery, red onion, bell pepper, carrot, and parsley to the bowl.
- Toss until all ingredients are well coated.
- Refrigerate for at least 1 hour before serving.
Notes
- For a tangier taste, add more vinegar.
- Store leftovers in an airtight container for up to 3 days.
