Ingredients

Scale
  • 500g mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 3 tbsp flour
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Melt butter in a pot over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Add mushrooms and cook until tender.
  4. Sprinkle flour and stir for 1 minute.
  5. Gradually add vegetable broth while stirring.
  6. Bring to a simmer and cook for 10 minutes.
  7. Stir in heavy cream and thyme.
  8. Season with salt and pepper.
  9. Blend half the soup for a creamier texture.
  10. Serve hot.
