Instructions
- Melt butter in a pot over medium heat.

- Sprinkle flour and stir for 1 minute.
- Gradually add vegetable broth while stirring.
- Bring to a simmer and cook for 10 minutes.
- Stir in heavy cream and thyme.
- Season with salt and pepper.
- Blend half the soup for a creamier texture.
