Ingredients

- 500g fresh mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat butter and olive oil in a large pot over medium heat.
- Add onions and garlic, sauté until softened.
- Add mushrooms and cook until they release their moisture.
- Pour in vegetable broth and bring to a simmer.
- Stir in thyme, salt, and pepper.
- Cook for 20 minutes, then blend the soup until smooth.
- Return to the pot, add heavy cream, and heat through.
- Serve hot with a sprinkle of fresh herbs.
