A delicious and creamy pasta salad that’s perfect for picnics, potlucks, or as a side dish. Easy to prepare and full of flavor.
Ingredients

- 8 oz pasta (rotini or penne)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup diced red bell pepper
- 1/2 cup diced cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
Instructions
- Cook pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, mix mayonnaise, sour cream, Dijon mustard, apple cider vinegar, salt, and black pepper.
- Add cooked pasta, red bell pepper, cucumber, red onion, and parsley to the bowl.
- Toss until all ingredients are well coated with the dressing.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- You can add other vegetables like cherry tomatoes or olives.
- For extra creaminess, add a splash of milk if the dressing is too thick.
- Best served cold.
