Description

A rich and flavorful creamy Tuscan chicken dish with spinach, sun-dried tomatoes, and Parmesan cheese.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup fresh spinach
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat. Cook chicken until golden brown, about 5-6 minutes per side. Remove and set aside.
  3. In the same skillet, add garlic and cook for 30 seconds until fragrant.
  4. Pour in chicken broth and heavy cream, stirring to combine.
  5. Add spinach, sun-dried tomatoes, and Italian seasoning. Cook until spinach wilts.
  6. Return chicken to the skillet and simmer for 5 minutes.
  7. Sprinkle Parmesan cheese over the chicken and serve.

Notes

  • For extra creaminess, add more heavy cream.
  • Substitute fresh tomatoes if sun-dried are unavailable.
