Instructions
- Preheat oven to 400°F (200°C).
- Cut potatoes into 1-inch cubes, leaving the skin on.
- Toss potato cubes with olive oil, salt, and pepper.
- Spread on a baking sheet and bake for 25-30 minutes until crispy.
- Sprinkle cheese and bacon over the potatoes.
- Return to oven for 2-3 minutes until cheese melts.
- Garnish with sour cream and chives.
- Serve warm.
