Ingredients

- 4 large baking potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 tbsp chopped green onions
- 1/4 cup sour cream
Instructions
- Preheat oven to 400°F.
- Scrub potatoes clean and dry them.
- Rub potatoes with olive oil, salt, and pepper.
- Bake potatoes for 45-50 minutes until tender.
- Let potatoes cool slightly, then cut in half.
- Scoop out most of the flesh, leaving a thin layer.
- Place skins on a baking sheet and bake for 10 minutes.
- Fill skins with cheese and bacon.
- Bake for 5 minutes until cheese melts.
- Top with green onions and serve with sour cream.
Notes
- Save the scooped potato for mashed potatoes.
- For crispier skins, bake longer after scooping.
- Add jalapeños for extra spice.
