Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk flour, baking soda, pumpkin pie spice, and salt in a bowl.
- Cream butter, brown sugar, and granulated sugar until fluffy.
- Beat in pumpkin puree, egg, and vanilla extract.
- Gradually mix in dry ingredients until combined.
- Scoop dough into balls and flatten slightly on the baking sheet.
- Bake for 10-12 minutes until edges are set.
- Cool completely before piping cream cheese frosting on top.
