A refreshing cucumber tomato salad perfect for summer. Crisp cucumbers and juicy tomatoes tossed with red onion and fresh herbs.
Ingredients

- 2 large cucumbers, sliced
- 4 medium tomatoes, chopped
- 1/2 red onion, thinly sliced
- 2 tbsp fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Wash and prepare all vegetables
- Combine cucumbers, tomatoes and red onion in a bowl
- Add chopped parsley
- Whisk together olive oil, lemon juice, salt and pepper
- Pour dressing over vegetables and toss gently
- Serve chilled
