Description

A refreshing cucumber tomato salad perfect for summer. Crisp cucumbers and juicy tomatoes tossed with red onion and fresh herbs.


Ingredients

Scale
  • 2 large cucumbers, sliced
  • 4 medium tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Wash and prepare all vegetables
  2. Combine cucumbers, tomatoes and red onion in a bowl
  3. Add chopped parsley
  4. Whisk together olive oil, lemon juice, salt and pepper
  5. Pour dressing over vegetables and toss gently
  6. Serve chilled
