Description

A creamy chocolate pudding made without dairy, perfect for those with lactose intolerance or following a dairy-free diet.


Ingredients

Scale
  • 2 cups coconut milk
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a saucepan, whisk coconut milk, cocoa powder, and maple syrup over medium heat.
  2. In a small bowl, mix cornstarch with 2 tbsp of cold water to make a slurry.
  3. Slowly pour the slurry into the saucepan while stirring.
  4. Cook until the mixture thickens, about 5 minutes.
  5. Remove from heat and stir in vanilla extract and salt.
  6. Pour into serving dishes and refrigerate for at least 2 hours before serving.

Notes

  • Use full-fat coconut milk for a creamier texture.
  • Adjust sweetness by adding more or less maple syrup.
  • For a richer flavor, use dark cocoa powder.
