- 1 whole turkey (12–14 lbs)
- 1/4 cup kosher salt
- 2 tbsp brown sugar
- 1 tbsp black pepper
- 2 oranges, sliced
- 1 lemon, sliced
- 1 bunch fresh thyme
- 1 bunch fresh rosemary
- 4 tbsp unsalted butter, softened
Instructions
- Pat the turkey dry with paper towels.
- Mix salt, brown sugar, and black pepper in a bowl.
- Rub the mixture evenly over the turkey, including under the skin.
- Place the turkey on a rack in a roasting pan and refrigerate uncovered for 12-24 hours.
- Preheat oven to 325°F (165°C).
- Stuff the turkey cavity with orange slices, lemon slices, thyme, and rosemary.
- Rub softened butter over the turkey skin.
- Roast for 3-3.5 hours or until internal temperature reaches 165°F (74°C).
- Let rest for 30 minutes before carving.

- Adjust salt quantity if using a smaller or larger turkey.
