Ingredients

- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and bell pepper, cook until soft.
- Add ground beef, chili powder, cumin, salt, and pepper. Cook until beef is browned.
- Place a tortilla in a clean skillet and spread half the beef mixture on one side.
- Sprinkle cheese over the beef and fold the tortilla in half.
- Cook for 2-3 minutes per side until golden and cheese is melted.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve.
Notes
- Use lean ground beef for less grease.
- Add jalapeños for extra spice.
- Serve with sour cream, salsa, or guacamole.
