Description

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and bell pepper, cook until soft.
  3. Add ground beef, chili powder, cumin, salt, and pepper. Cook until beef is browned.
  4. Place a tortilla in a clean skillet and spread half the beef mixture on one side.
  5. Sprinkle cheese over the beef and fold the tortilla in half.
  6. Cook for 2-3 minutes per side until golden and cheese is melted.
  7. Repeat with remaining tortillas and filling.
  8. Cut into wedges and serve.
