Description

Tender, slow-cooked pork carnitas topped with a fresh pineapple salsa for a balance of savory and sweet flavors.


Ingredients

Scale
  • 2 lbs pork shoulder, cut into chunks
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • 4 cloves garlic, minced
  • 1 orange, juiced
  • 1 cup pineapple, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Season pork with salt, pepper, cumin, oregano, and garlic.
  2. Place pork in a slow cooker and add orange juice.
  3. Cook on low for 6-8 hours until tender.
  4. Shred pork with forks.
  5. Mix pineapple, red onion, jalapeño, cilantro, and lime juice for the salsa.
  6. Serve carnitas topped with pineapple salsa.
