- 4 lbs chicken pieces (legs, thighs, or breasts)
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 1 cup pitted prunes
- 1/2 cup pitted green olives
- 1/2 cup capers with juice
- 6 garlic cloves, minced
- 2 tbsp dried oregano
- Salt and pepper to taste
- 1/4 cup brown sugar
- 1/2 cup white wine
- 2 tbsp fresh parsley, chopped
Instructions
- Combine chicken, olive oil, vinegar, prunes, olives, capers, garlic, oregano, salt, and pepper in a large bowl. Cover and marinate overnight in the fridge.
- Preheat oven to 350°F (175°C).
- Arrange chicken and marinade in a baking dish. Sprinkle brown sugar evenly over the top.
- Pour white wine around the chicken.
- Bake for 50-60 minutes, basting occasionally, until chicken is fully cooked.
- Garnish with fresh parsley before serving.

- For best results, marinate the chicken overnight.
- Adjust sugar for sweetness preference.
- Serve with rice or roasted potatoes.
