Description

A simple and delicious crustless pie made with fresh rhubarb and a creamy custard filling.


Ingredients

Scale
  • 2 cups chopped rhubarb
  • 3 eggs
  • 1 cup sugar
  • 1/4 cup flour
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 tablespoon butter, melted

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spread chopped rhubarb evenly in a greased pie dish.
  3. In a bowl, whisk eggs, sugar, flour, vanilla, and salt until smooth.
  4. Gradually stir in milk and melted butter.
  5. Pour the custard mixture over the rhubarb.
  6. Bake for 45-50 minutes or until set.
  7. Let cool before serving.
