- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella balls (bocconcini)
- 1/4 cup fresh basil leaves, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and slice the cucumber and cherry tomatoes.
- Drain the mozzarella balls and halve them if large.
- In a large bowl, combine cucumber, tomatoes, mozzarella, and basil.
- Drizzle with olive oil and balsamic vinegar.
- Season with salt and pepper, then toss gently.
- Serve immediately or chill for 30 minutes for enhanced flavor.
