Description
Elote, also known as Mexican Street Corn, is a popular grilled corn dish coated with creamy mayonnaise, tangy lime, chili powder, and crumbled cheese.

- 4 ears of corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 teaspoon chili powder
- 1 lime, cut into wedges
- 1/4 cup chopped cilantro
Instructions
- Preheat grill to medium-high heat.
- Grill corn, turning occasionally, until charred in spots (about 10 minutes).
- In a bowl, mix mayonnaise and sour cream.
- Brush grilled corn with the mayonnaise mixture.
- Sprinkle with cotija cheese, chili powder, and cilantro.
- Serve with lime wedges.
Notes
- Cotija cheese can be substituted with feta cheese.
- For a spicier version, add cayenne pepper.
