A quick and simple coleslaw with a Mexican twist, perfect for tacos, burritos, or as a side dish.
Ingredients

- 4 cups shredded green cabbage
- 1 cup shredded red cabbage
- 1 large carrot, grated
- 1/4 cup chopped fresh cilantro
- 1/4 cup mayonnaise
- 2 tbsp lime juice
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, combine green cabbage, red cabbage, carrot, and cilantro.
- In a small bowl, whisk together mayonnaise, lime juice, cumin, chili powder, salt, and pepper.
- Pour dressing over the cabbage mixture and toss until evenly coated.
- Refrigerate for at least 30 minutes before serving.
Notes
- For extra spice, add a pinch of cayenne pepper.
- Substitute Greek yogurt for mayonnaise for a lighter version.
- Best served chilled.
