Ingredients

- 1 cup wild rice, rinsed
- 8 oz mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups water
- 1 tbsp olive oil
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup heavy cream (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add mushrooms and cook until they release their juices.
- Stir in wild rice, thyme, salt, and pepper.
- Pour in vegetable broth and water, bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes or until rice is tender.
- Stir in heavy cream if using, then serve hot.
Notes
- Wild rice takes longer to cook than white rice.
- You can use any type of mushrooms.
- For a vegan version, omit the heavy cream.
