Description

A hearty and flavorful soup made with mushrooms and wild rice, perfect for a comforting meal.


Ingredients

Scale
  • 1 cup wild rice, rinsed
  • 8 oz mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups water
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup heavy cream (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add mushrooms and cook until they release their juices.
  4. Stir in wild rice, thyme, salt, and pepper.
  5. Pour in vegetable broth and water, bring to a boil.
  6. Reduce heat, cover, and simmer for 45 minutes or until rice is tender.
  7. Stir in heavy cream if using, then serve hot.

Notes

  • Wild rice takes longer to cook than white rice.
  • You can use any type of mushrooms.
  • For a vegan version, omit the heavy cream.
