Ingredients

- 2 cups sliced mushrooms
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 6 small corn tortillas
- 1/2 cup diced onion
- 1/2 cup chopped cilantro
- 1 lime, cut into wedges
- 1/2 cup crumbled feta cheese (optional)
Instructions
- Heat olive oil in a pan over medium heat.
- Add mushrooms and cook for 5 minutes until softened.
- Stir in cumin, paprika, garlic powder, salt, and black pepper.
- Cook for another 3 minutes until mushrooms are well-seasoned.
- Warm tortillas in a dry pan or microwave.
- Fill tortillas with mushrooms, diced onion, and cilantro.
- Squeeze lime juice on top and add feta cheese if desired.
- Serve immediately.
Notes
- Use any type of mushrooms you prefer.
- For extra heat, add chopped jalapeños or hot sauce.
- If corn tortillas aren’t available, flour tortillas work too.
