A simple and delicious rhubarb crisp with a crunchy oat topping.
Ingredients

- 4 cups chopped rhubarb
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup butter, melted
- 1 tsp cinnamon
Instructions
- Preheat oven to 375°F (190°C).
- Spread rhubarb in a baking dish and sprinkle with granulated sugar.
- Mix flour, oats, brown sugar, cinnamon, and melted butter in a bowl.
- Sprinkle the topping over the rhubarb.
- Bake for 35-40 minutes until golden and bubbly.
- Let cool slightly before serving.
Notes
- Use fresh or frozen rhubarb.
- Serve warm with ice cream or whipped cream.
- Adjust sugar to taste if rhubarb is very tart.
