- 6 egg yolks
- 3/4 cup white sugar
- 2/3 cup milk
- 1 1/4 cups heavy cream
- 1/2 teaspoon vanilla extract
- 1 pound mascarpone cheese
- 1/4 cup strong brewed coffee, cooled
- 2 tablespoons rum
- 24 ladyfinger cookies
- 2 tablespoons cocoa powder
Instructions
- Beat egg yolks and sugar until thick and pale.
- Heat milk in a saucepan until simmering, then slowly whisk into the egg mixture.
- Return mixture to the saucepan and cook over low heat, stirring constantly, until thickened.
- Remove from heat and let cool slightly.
- Beat heavy cream and vanilla until stiff peaks form.
- Fold mascarpone into the egg mixture, then fold in the whipped cream.
- Mix coffee and rum in a shallow dish.
- Dip ladyfingers briefly into the coffee mixture and layer them in a dish.
- Spread half the mascarpone mixture over the ladyfingers.
- Repeat layers and dust with cocoa powder.
- Refrigerate for at least 4 hours before serving.
