- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1 clove garlic, minced

- 2 tablespoons olive oil
Instructions
- Grate the zucchinis and mix with salt. Let sit for 10 minutes, then squeeze out excess moisture.
- In a bowl, combine zucchini, flour, Parmesan, egg, garlic, and black pepper.
- Heat olive oil in a pan over medium heat.
- Scoop small portions of the mixture into the pan and flatten slightly.
- Cook for 3-4 minutes per side until golden brown.
- Drain on paper towels before serving.

- Use a cheesecloth to squeeze out extra moisture for crispier fritters.
- Serve with sour cream or yogurt for dipping.
