Ingredients

- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup ricotta cheese
- 2 eggs
- 1/2 cup milk
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1 tbsp melted butter
Instructions
- Mix dry ingredients in a bowl.
- Whisk ricotta, eggs, milk, lemon zest, lemon juice, and melted butter in another bowl.
- Combine wet and dry ingredients gently.
- Heat a pan over medium heat and lightly grease it.
- Pour batter onto the pan in small rounds.
- Cook until bubbles form, then flip and cook the other side.
- Serve warm.

- Do not overmix the batter.
- Adjust lemon zest to taste.
- Use fresh ricotta for best results.
