Description

Fluffy pancakes with a hint of lemon and creamy ricotta.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup ricotta cheese
  • 2 eggs
  • 1/2 cup milk
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tbsp melted butter

Instructions

  1. Mix dry ingredients in a bowl.
  2. Whisk ricotta, eggs, milk, lemon zest, lemon juice, and melted butter in another bowl.
  3. Combine wet and dry ingredients gently.
  4. Heat a pan over medium heat and lightly grease it.
  5. Pour batter onto the pan in small rounds.
  6. Cook until bubbles form, then flip and cook the other side.
  7. Serve warm.

  • Do not overmix the batter.
  • Adjust lemon zest to taste.
