- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp pumpkin pie spice
- 3/4 cup milk
- 1/2 cup pumpkin puree
- 1 large egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
- Maple syrup for serving
Instructions
- In a bowl, whisk flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
- In another bowl, mix milk, pumpkin puree, egg, melted butter, and vanilla.
- Combine wet and dry ingredients. Stir until just mixed.
- Heat a greased pan over medium heat.
- Pour 1/4 cup batter for each pancake.
- Cook until bubbles form, then flip and cook for another minute.
- Serve warm with maple syrup.
Notes
- Do not overmix the batter for fluffier pancakes.
- Adjust sweetness by adding more sugar if needed.
- Use fresh pumpkin puree for best results.
