A delicious fresh fruit tart with a crisp crust and creamy filling.
Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled
- 1/4 cup granulated sugar
- 1 egg yolk
- 2 tbsp cold water
- 1 cup pastry cream
- 2 cups assorted fresh fruits (berries, kiwi, mango)
- 1/4 cup apricot jam, warmed
Instructions
- Preheat oven to 375°F (190°C).
- Mix flour, butter, and sugar until crumbly.
- Add egg yolk and water, mix until dough forms.
- Press dough into tart pan and bake for 15 minutes.
- Cool crust completely.
- Spread pastry cream evenly in crust.
- Arrange fresh fruits on top.
- Brush with warmed apricot jam.
- Chill for 1 hour before serving.
Notes
- Use ripe but firm fruits.
- Chill dough before baking for best results.
- Serve within 6 hours for crisp crust.
