A quick and easy Fritos corn salad that’s perfect for potlucks, picnics, or a simple side dish. Crunchy Fritos add texture to sweet corn and fresh veggies.

- 2 cups Fritos corn chips
- 1 can (15 oz) whole kernel corn, drained
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/2 cup shredded cheddar cheese
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp lime juice
- 1/2 tsp chili powder
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and black pepper.
- Add corn, red bell pepper, red onion, and cheddar cheese. Toss to coat.
- Gently fold in Fritos just before serving to keep them crunchy.
- Serve immediately.
Notes
- For a spicier kick, add diced jalapeños.
- Substitute Greek yogurt for sour cream if preferred.
- Store leftovers without Fritos to maintain crunch.
