- 250g pasta (penne or fusilli)
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, and red onion.
- Crumble the frozen feta cheese over the salad.
- Drizzle with olive oil and lemon juice, then sprinkle with oregano, salt, and pepper.
- Toss gently to combine all ingredients.
- Chill in the refrigerator for at least 30 minutes before serving.
