Description

A creamy and flavorful garlic and herb risotto that’s perfect for a comforting meal.


Ingredients

Scale
  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • 1/4 cup white wine (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in Arborio rice and cook for 1-2 minutes.
  4. Pour in white wine (if using) and stir until absorbed.
  5. Add broth, one ladle at a time, stirring frequently until absorbed.
  6. Continue adding broth until rice is creamy and al dente (about 20 minutes).
  7. Remove from heat and stir in butter, Parmesan, and herbs.
  8. Season with salt and pepper.
  9. Serve warm.

  • Stir frequently to prevent sticking.
  • Use warm broth for best results.
