A creamy and flavorful garlic and herb risotto that’s perfect for a comforting meal.
Ingredients

- 1 cup Arborio rice
- 4 cups vegetable broth
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 2 tbsp olive oil
- 1/4 cup white wine (optional)
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in Arborio rice and cook for 1-2 minutes.
- Pour in white wine (if using) and stir until absorbed.
- Add broth, one ladle at a time, stirring frequently until absorbed.
- Continue adding broth until rice is creamy and al dente (about 20 minutes).
- Remove from heat and stir in butter, Parmesan, and herbs.
- Season with salt and pepper.
- Serve warm.
Notes
- Stir frequently to prevent sticking.
- Use warm broth for best results.
- Adjust seasoning to taste.
