- 1/2 cup unsalted butter, softened
- 6 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 1 tbsp salt
- 1 tbsp black pepper
Instructions
- Preheat oven to 450°F.
- Mix butter, garlic, rosemary, thyme, salt, and pepper in a bowl.
- Rub the butter mixture evenly over the roast.
- Place roast on a rack in a roasting pan, fat side up.
- Roast for 15 minutes, then reduce heat to 325°F.
- Cook until internal temperature reaches 120°F for rare or 130°F for medium-rare (about 15 minutes per pound).
- Remove from oven and let rest for 15 minutes before slicing.
