A creamy and flavorful garlic potato soup that’s easy to make and perfect for any occasion.
Ingredients

- 4 medium potatoes, peeled and diced
- 6 cloves garlic, minced
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add potatoes, broth, salt, pepper, and thyme. Bring to a boil.
- Reduce heat and simmer for 20 minutes or until potatoes are tender.
- Blend the soup until smooth using an immersion blender.
- Stir in heavy cream and heat for another 5 minutes.
- Serve hot, garnished with fresh herbs if desired.
Notes
- Adjust seasoning to taste.
- For a lighter version, replace heavy cream with milk.
- Store leftovers in the refrigerator for up to 3 days.
