Ingredients

- 2 cups gluten-free rolled oats
- 1 cup almond flour
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 medium apples, grated
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1 egg
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mix oats, almond flour, cinnamon, baking powder, and salt.
- In another bowl, combine grated apples, honey, coconut oil, vanilla, and egg.
- Pour wet ingredients into dry ingredients and stir until well combined.
- Spread mixture evenly into the prepared pan.
- Bake for 25-30 minutes or until golden brown.
- Let cool completely before cutting into bars.
Notes
- Store in an airtight container for up to 5 days.
- Freeze for longer storage.
- Substitute maple syrup for honey if desired.
