- 8 oz penne pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives, pitted
- 1/2 cup feta cheese, crumbled
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
- Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
- Add the cooked pasta to the vegetable mixture.
- Pour the dressing over the pasta and toss to combine.
- Serve immediately or refrigerate for later.
