Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large bowl, combine cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
  3. Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
