Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups chopped romaine lettuce
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup kalamata olives
  • 1/2 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar

Instructions

  1. Preheat grill to medium-high heat.
  2. Rub chicken breasts with olive oil, oregano, salt, and pepper.
  3. Grill chicken for 6-7 minutes per side until cooked through. Let rest for 5 minutes before slicing.
  4. In a large bowl, combine lettuce, cucumber, tomatoes, onion, and olives.
  5. Top salad with sliced grilled chicken and feta cheese.
  6. Drizzle with olive oil and red wine vinegar. Toss gently before serving.
