Description

Greek stuffed peppers are a flavorful and healthy dish filled with a mixture of ground meat, rice, herbs, and spices. They’re baked until tender and topped with feta cheese.


Ingredients

Scale
  • 4 large bell peppers (any color)
  • 1 lb ground beef or lamb
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup crumbled feta cheese
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh parsley
  • 1 tbsp olive oil
  • 1 cup tomato sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the peppers and remove seeds.
  3. In a pan, sauté onion and garlic in olive oil until soft.
  4. Add ground meat, cook until browned. Drain excess fat.
  5. Stir in cooked rice, oregano, salt, pepper, and half the feta cheese.
  6. Fill peppers with the mixture and place in a baking dish.
  7. Pour tomato sauce over and around the peppers.
  8. Bake for 40-45 minutes until peppers are tender.
  9. Sprinkle remaining feta and parsley before serving.

Notes

  • You can use quinoa instead of rice.
  • For a vegetarian version, substitute meat with lentils.
  • Leftovers keep well in the fridge for 3 days.
