Description
Greek stuffed peppers are a flavorful and healthy dish filled with a mixture of ground meat, rice, herbs, and spices. They’re baked until tender and topped with feta cheese.
Ingredients

- 4 large bell peppers (any color)
- 1 lb ground beef or lamb
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup crumbled feta cheese
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh parsley
- 1 tbsp olive oil
- 1 cup tomato sauce
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the peppers and remove seeds.
- In a pan, sauté onion and garlic in olive oil until soft.
- Add ground meat, cook until browned. Drain excess fat.
- Stir in cooked rice, oregano, salt, pepper, and half the feta cheese.
- Fill peppers with the mixture and place in a baking dish.
- Pour tomato sauce over and around the peppers.
- Bake for 40-45 minutes until peppers are tender.
- Sprinkle remaining feta and parsley before serving.
Notes
- You can use quinoa instead of rice.
- For a vegetarian version, substitute meat with lentils.
- Leftovers keep well in the fridge for 3 days.
