- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups mixed greens
- 1 avocado, sliced
- 1/2 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup chopped parsley
- 1/4 cup chopped basil
- 1/4 cup Greek yogurt
- 2 tbsp mayonnaise
- 1 garlic clove, minced
- 1 tbsp lemon juice
- 1 tsp honey
- 1/4 tsp salt
Instructions
- Preheat grill to medium-high heat.
- Coat chicken with olive oil, salt, and pepper.
- Grill chicken for 6-7 minutes per side until fully cooked. Let rest for 5 minutes, then slice.
- In a bowl, mix Greek yogurt, mayonnaise, garlic, lemon juice, honey, and salt to make the dressing.
- Toss greens, avocado, cucumber, red onion, parsley, and basil in a large bowl.
- Drizzle dressing over the salad and top with sliced chicken.
- Serve immediately.
