Description

A refreshing and vibrant salad packed with fresh greens and a creamy herb dressing.


Ingredients

Scale
  • 2 cups mixed greens (spinach, kale, arugula)
  • 1 avocado, diced
  • 1 cucumber, sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/4 cup Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Wash and dry all greens and herbs.
  2. In a large bowl, combine mixed greens, avocado, cucumber, parsley, and basil.
  3. In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper.
  4. Pour dressing over the salad and toss gently to coat.
  5. Serve immediately.

  • For extra crunch, add toasted nuts or seeds.
  • Store dressing separately if making ahead.
