A refreshing and vibrant salad packed with fresh greens and a creamy herb dressing.
Ingredients

- 2 cups mixed greens (spinach, kale, arugula)
- 1 avocado, diced
- 1 cucumber, sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/4 cup Greek yogurt
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- Wash and dry all greens and herbs.
- In a large bowl, combine mixed greens, avocado, cucumber, parsley, and basil.
- In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper.
- Pour dressing over the salad and toss gently to coat.
- Serve immediately.

- For extra crunch, add toasted nuts or seeds.
- Store dressing separately if making ahead.
- Substitute sour cream for Greek yogurt if desired.
