A fresh and vibrant salad packed with greens and a creamy herb dressing.
Ingredients
Scale
- 2 cups chopped romaine lettuce
- 1 cup chopped kale
- 1 avocado, diced
- 1 cucumber, sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh chives
- 1/4 cup Greek yogurt
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- Wash and chop all greens.
- Combine romaine, kale, avocado, and cucumber in a large bowl.
- Blend parsley, basil, chives, yogurt, lemon juice, olive oil, garlic, salt, and pepper in a blender until smooth.
- Pour dressing over the salad and toss well.
- Serve immediately.

- Store leftover dressing separately for up to 3 days.
- Add grilled chicken or tofu for extra protein.
