Description

A fresh and vibrant salad packed with greens and a creamy herb dressing.


Ingredients

Scale
  • 2 cups chopped romaine lettuce
  • 1 cup chopped kale
  • 1 avocado, diced
  • 1 cucumber, sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh chives
  • 1/4 cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Wash and chop all greens.
  2. Combine romaine, kale, avocado, and cucumber in a large bowl.
  3. Blend parsley, basil, chives, yogurt, lemon juice, olive oil, garlic, salt, and pepper in a blender until smooth.
  4. Pour dressing over the salad and toss well.
  5. Serve immediately.

Notes

  • Store leftover dressing separately for up to 3 days.
  • Add grilled chicken or tofu for extra protein.
