- 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- Wooden or metal skewers
Instructions
- In a bowl, mix olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper.
- Add chicken cubes to the marinade and coat well. Refrigerate for 1-2 hours.
- Preheat the grill to medium-high heat.
- Thread chicken and vegetables alternately onto skewers.
- Grill kabobs for 10-12 minutes, turning occasionally, until chicken is fully cooked.
- Serve hot with your favorite side dishes.
Notes
- If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
- You can swap bell peppers for zucchini or mushrooms.
- For extra flavor, brush kabobs with leftover marinade while grilling (discard any unused marinade).
