Description

Ingredients

  • 8 oz pasta
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh basil, chopped

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat grill or grill pan over medium heat.
  3. Toss bell pepper, zucchini, and cherry tomatoes with olive oil, garlic, salt, and black pepper.
  4. Grill vegetables for 5-7 minutes until tender and slightly charred.
  5. Toss grilled vegetables with cooked pasta.
  6. Garnish with Parmesan cheese and fresh basil.
