Description
A hearty and flavorful beef stew made with Guinness beer, tender beef, and root vegetables. Perfect for cold days.

- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 4 carrots, sliced
- 3 celery stalks, sliced
- 2 large potatoes, peeled and cubed
- 1 cup Guinness beer
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat. Brown the beef on all sides, then remove and set aside.
- In the same pot, sauté onions and garlic until soft.
- Add carrots, celery, and potatoes. Cook for 5 minutes.
- Return the beef to the pot. Add Guinness, beef broth, tomato paste, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 1.5-2 hours until beef is tender.
- Season with salt and pepper before serving.
Notes
- For extra flavor, marinate the beef in Guinness for a few hours before cooking.
- This stew tastes even better the next day.
