- 1 cup cottage cheese
- 1/2 cup hatch chiles, roasted and chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cumin
- Salt to taste
Instructions
- In a blender or food processor, blend cottage cheese until smooth.
- Transfer to a saucepan over medium heat.
- Add hatch chiles, cheddar cheese, milk, garlic powder, onion powder, and cumin.
- Stir continuously until cheese melts and mixture is creamy.
- Season with salt to taste.
- Serve warm with tortilla chips or as a topping for tacos.
Notes
- For extra heat, add a pinch of cayenne pepper.
- Store leftovers in an airtight container in the fridge for up to 3 days.
