Ingredients

Scale
  • 1 cup pumpkin puree
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup almond butter
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a muffin tin with paper liners.
  3. In a bowl, mix pumpkin puree, eggs, maple syrup, and vanilla.
  4. Add almond butter, cinnamon, baking soda, and salt. Stir until smooth.
  5. Pour batter into muffin cups, filling each 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool before serving.
