- 1 cup pumpkin puree
- 2 eggs
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup almond butter
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C).
- Line a muffin tin with paper liners.
- In a bowl, mix pumpkin puree, eggs, maple syrup, and vanilla.
- Add almond butter, cinnamon, baking soda, and salt. Stir until smooth.
- Pour batter into muffin cups, filling each 3/4 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- For extra flavor, add chopped nuts or chocolate chips.
- Use homemade pumpkin puree for best results.
